Cynar is an Italian aperitif liqueur made using 13 different plants. The main ingredient is in fact artichoke but don't let that put you off. It has a bittersweet flavour, and it works well served with ice, soda and a slice of orange (very popular in Italy). It works well in cocktails made with Campari, where it can replace the Campari with great effect.
Local Italian restaurant Bici Cafe uses this as part of its Cocchi Wolf Negroni made with Cocchi Vermouth and Wolftown Gin. That's good enough for us.
